When you switch between apps, the cursor may not be active without tapping on the screen, and then it may or may not be in the place you left off.
Sometimes the cursor disappears entirely you can still type but the cursor is gone making it difficult to know where you are at on the page. The text selection handles don't work consistently with bugs that sometimes prevent you from selecting exactly the block of text you want. Primarily, text selection for copy and paste actions is buggy and inconsistent in its behavior. Text editing on an iPad is still a bit of a chore for a few reasons.
